thanks its all part of the journey, ideally you want a bridge, and this applies to other fruits as well- e.g. mango, custard apple, persimmons, i cut up pieces and keep it in freezer as backups also along with ripe product of same.

the only way around this is to freeze 2 days supply of ripe bananas, and have that as a bridge, so about 55-60 med. bananas in the freezer. when that runs out top it up, as you want a continuous bridge incase you get low. Also you need a banana ripening electric blanket on medium setting "2" to ripen them faster, with temperature control in the room esp. at night when it gets cold. It can cut ripening duration from 7 days to only 2 nights. Also you want to buy only yellow bananas, at worst green tinge slight okay. here in australia we have pathetic supply of other fruits and very expensive others, bananas is the best to base the diet around, with dates of course. banana is cheap about 1.60 a kg during summer.
