For the past few years I have been on a journey to a healthful life. I am passionate about the environment and ironically the two go hand in hand ;) Within the past year and a half I have become more and more intrigued with the 801010 lifestyle and have been transitioning from high carb low fat vegan (mostly raw) to fully raw :) I spend a lot of time reading, researching, and learning about this lifestyle from those that inspire most of us here. I'd love to connect with many other raw vegans (or hell, just vegans!) and learn from each other.

You are very welcome Andrea! :) Yeah it can surely be tough to get in 2 or 3 huge meals with the added bulk of eating low fat.
I think one good approach is to eat what feel comfortable and if you need to, eat more frequent meals. Over time you'll get more and more used to the larger fruit based meals.
Also, making smoothies can really be helpful in packing in the calories. To me nothing is easier to take great quantities of than a banana, berry and date smoothie. If you are not a person who relishes your huge green salads you can also sneak some greens into the smoothies, Many greens taste delicious and lend a nice and hearty feel to the smoothies. I like baby spinach (the older has a lot of oxalic acid) as well as baby spring greens.
To get started. Be sure to note food, calorie, water, sleep recommendations and log (can use www.cronometer.com or similar) your food/drink intake, at least for the first few months to get used to what you need to eat to stay on target calorie wise as well as macronutrient (carbs:fat:protein) wise. Even if someone is a long time, established, raw vegan, it is possible to discover some things using "hard-data"; spot trends, be able to make good adjustments, that might not be possible otherwise.
