Hey Kat, I blended the eggplant with lemon, parsley, i put cumin in it (not 811), i put a 1/2 tsp (very little so i dont think it made any difference of avocado (the original calls for tahini which i would do in the winter but for now i am avoiding fats) some random kale leaf made it into the blender. i got a bit creative with the next thing- i had barberries and saffron soaking from the morning so i threw the barberries and the soaking water in the blender. they taste sour, kinda lemonie plus they are from the same part of the world baba ganoush is so i figured might work and it did. also i am reading about the medicinal properties of them and i am blown away http://www.umm.edu/altmed/articles/barberry-000224.htm. anyways i think that was it. i set aside a bowl for my friend and blended it with tahini, garlic, salt. and it was a hit as well. used it as a lettuce, tomato dip.
the day before i tried peeling the eggplant and soaking in water and lemon -supposedly removes bitterness, but i prefer to blend it now. let me know if you come up with any improvements on the recipe :)
