What's the scoop on coconut oil? I have read that it digests like a carbohydrate rather than a fat. If so, I imagine it could be tasty in cooked meals when/if I find myself in a situation where I have to cook.

Thanks guys, I got the answer - it still has all the problems associated with an overconsumption of fat.
I think if it's raw organic cold pressed coconut oil and you are eating something like steamed sweet potato or another lightly steamed veggie, it would be totally fine to add the coconut oil
Despite this one's coco derivation, no oil is in your best interests.
