This impromptu recipe is amazingly simple (duh.) and is absolutely SCRUMDILIUMPTIOUS. (Yes, I made up that word. If it is actually a word, it certainly is not spelled correctly.) It's sweet and creamy, but with a (very) subtle bite from the green onion. I hope that you enjoy it if you happen to try it out! (:
- Freshly-squeezed orange juice (or other sweet citrus, like tangerine), 1-3 cups, depending on the size of the salad
- One small-to-medium Hass avocado, coarsely choppoed
- The tops of one small bunch of green onion, lightly chopped
Blend all ingredients together in a food processor or small blender, until a smooth, dressing consistency is reached. Pour over your salad (I like lettuce, tomato, cucumber, and bell pepper in mine), mix in well, and CHOW DOWN!
