Today was truly magical and definitely one of the best days I can remember. First of all I went on the most amazing hike. The trail was hard due to sharp limestone for about half of the 2.4 miles one way and both ways were up and down. We stopped and rocked climbed up to see a historical site and during this time I realized I was terrified of the combination of me, rocks, and falling. Somehow I pulled it off and the pay off was totally worth it. Beautiful views of the ocean and mountains. The end of the hike was down on a secluded undisturbed beach. The snorkeling was the best ever - so many gorgeous colors and many different varities of fish and plant life in pristine condition. On the hike back we found a fresh water source...I haven't had water straight from the ground is so long. I really can't wait to do this hike again - I wanna do it every weekend!
The second thing that made this day so great was that on the way home I stopped at a nursery I had been meaning to swing by. The lady there was so darn nice and answered all of my questions. Although not label organic she uses no pesticides and only organic fertilizers. She had a couple plants I haven’t seen yet on the island so I scooped them up: Hawaiian guava, Barbados cherries, and mint. AAAHH I’m in heaven!! The guava and cherry trees are already pretty large so hoping within the year they will produce. The mint is for my minty carob banana smoothies (oh yes!!).
Number 3, I tried my first Atis fruit (nicknamed sugar apple so I’m assuming it is in the same family as cherimoya). Absolutely delicious :D !!!! Its like a mix between a pear and apple but sweeter than that would be. I saved the seeds and looked it up - these trees are super easy to grow so yes I will be having one of these in the backyard as well. So now I am growing each fruit, veggie, and herb I eat on a regular basis except oranges and celery, both of which I’ve had no luck growing. Not all are producing yet but we are getting close!
Last but not least the most important thing that happened today. I DID IT!! YES IT!! I finally ate 2,500 calories. Actually, I ate 3016 calories of delicious sweet fruit - WHAT!!! Honestly it really wasn’t that hard since I did all that hiking and burned a ton of calories. However it makes me wonder if the bananas I usually eat are heavier and denser with calories because when I eat my banana smoothies from the super creamy bananas I fill up much faster than I did with these store bought ones (I didn’t have any of them ripe and resorted to store bought which are far from the deliciousness I’m used to).
Anyway today was glorious and I am so thankful that I am living one amazing life.
