30 Bananas a Day!

1st day of being totally vegan! So much fun!!!

So I have major news!  Someone suggested for me to use Cronometer to make sure that I am eating enough calories, and I just broke 2,000 calories!  I have now eaten 2,030 calories today, and I just had a wonderful dinner of 2 steamed potatoes over snow peas with squash sauce on top!  I feel so full and content, and especially so because my brother started leaving me alone when he saw how much food I was consuming.  Even my mom left me alone and seemed satisfied that I was eating a lot of food.  For breakfast I had an odd smoothie of 3 bananas, 1 large stick of celery, and 2 apples.  It was ok, but I was up really early this morning, so I just kinda threw something together.  I dont really suggest that recipe, by the way.  I will just kinda be throwing stuff together for the next two days until I can get to the grocery store to buy lots and lots of fruit.  Anywho, For lunch I had a salad, a banana, some dried craisins, pistachios, an apple, and a vegan granola bar.  I feel like I could have eaten more, though, and I was hungry again by the end of school.  I am definitely packing more in my lunch tomorrow, especially what fruit we still have left in the house.  I don't think that my mom, or anyone that I talk to really, understand that I need to be eating a LOT more fruit.  Everyone says that they wouldn't be able to go vegan because they "hate vegetables. "  and yes veggies are extraordinarily important, but I think that they underestimate how much fruit, especially bananas, that I am supposed to be eating.  Do any of you get the same reaction from people?  A lot of people that I talk to also say "I love me my meat, so I could never go vegan."  I feel like they really could give up meat, as all of us have done, if they just realized how easy it is and how much they really don't need it.  

Anywho, do any of you have really good high calorie or high carb recipes for me to try?  I feel like I need to eat more colories, and after how full I feel from this dinner that I just ate, I am excited about feeling this way after every other meal that I have.  See you guys later!

Yup, you really do get to eat (and want to eat) a ton of food and lots of fruit. Some good, dense fruits I love would be dates of course, but that's if you hydrate enough. Perfect snack food though, and bananas and really all the sweet fruits are a lot more calorie dense which gives you tons of variety and lots of delicious smoothies ("tropical themed" lol). Potatoes, brown rice or corn noodle (perfect if you love pasta), rice, oats, lots of leafy greens, too (you can make some amazing salads with this lifestyle lol) and of course since you are just starting, some vegan granola bars are fine to add as snacks if you don't have anything else. But honestly, the recipes are surprisingly endless and so delicious and filling. I love making vegan "taco salad" bowls - avocado, rice, salsa, beans, etc. So yummy. I'm in love with making smoothie bowls too - very pretty and lots of lovely ingredients, and a really nice breakfast option if you have a bit more time (banana ice cream and any topping you like, from berries, other fruit etc... you can really make them look nice and colorful - I post some on my instagram because they are so fun and delicious). 

Just keep it high carb - there is so much inspiration online and you can prove to your family how healthy and delicious this lifestyle is, just be patient and keep believing in it. If you have any questions feel free to message me! :)

I always recomend the fruit, first and foremost, however if your still needing some high carb cooked foods, Say Hello to rice. You can put just about anything with it since it's sorta a blank canvas.

Another one of my favorite cooked meals back when I still ate cooked vegan was somthing i discovere while watching a video on vegan communes on youtube (Dancing rabbit village secificaly)

The guy on the video was having what he called "The usual" which turned out to be Rolled Oats, plus anything he happened to have on hand.

My "Usual" was Oats, Pinto beans, Salsa, and pickles ether eaten cold or cooked in a crock pot for a while (although when cooked I'd leave out the pickles since I hate warm pickles).

This sorta dish is also very versitile since it's a blank canvas. If I'm out of Salsa I'd use some Ketchup for flavor instead, substituting enough water so the oats arn't dry.

If i had leftovers from some other cooked vegan meal, I'd add oats and salsa to it.

Just remember oats can be a little tougher to digest then rice or potatoes, but they are cheap, taste good and are filling.
