It's going well, in the first week (December 1st-5th or so) I had some rice twice, but other than that 100% LFRV. And I did an amazing workout today, 6 mile run followed by 60 min p90x workout. I've noticed my recovery from intense workouts it better and the 5-7lbs I gained at first seems to be wonderfully falling off. And I'm getting hungrier to I'm upping my calories from 2,500 average to 3,000 average :)
Don't worry about little "split ups" everything you are doing now is working in the direction of better health, so congrats! And have a blast at the potluck :)

Yes! Dressings are my fav. They are so much fun to create. For zucchini pasta an easy one is blending a carton of cherry tomatoes with basil. Kristina Carrillo-Bucaram has one on the site which is called, "epic marinera". I haven't tried it but it looks delsih! Another one I like for fruiter salads is a handful of soaked figs, apple slices and some fresh squeezed oj. Oh and pesto, blend together spinach, garlic (optional), basil, lemon juice, and defrosted peas. So yummy! But I think my fav. pesto is blended broccoli, sun dried tomatoes, lemon juice, basil and a pinch of fresh garlic. I could go on forever. but here's a few for you to try!
Hope you've been having fun on your first few days. I've been vegan for 2 years and HCRV for the past 6 weeks. When I was on a vegan diet I restricted my calories and was eating quite a high fat diet, even though it was all organic and unprocessed, I ate a ton of nuts. It really took a toll on my digestive system and although I felt better than before I was vegan, I knew I could feel even better :) And I was right. The first month was a little tough, a bit of weight gain and skin breakouts, but now I'm slowly losing it (and I know it's fat, not just water weight!) and my skin is clearer and softer than ever!
