Hi folks, I became a high carb vegan as of January 1, 2015, and have easily settled into this lifestyle for good. I come from a long history of experimentation with food and health, including a pretty long stint on the Paleo diet. I thought it was the answer at first, and quickly dropped fifteen pounds to my ideal weight. But gradually I became more and more anxious and depressed, and lost my ability to digest carbs properly. Every time I had a few too many carbs, I got bloated. So I kept restricting carbs more and more, and eating less and less, and still finding it difficult to maintain my weight. SO I started intermittent fasting, which sucks. That helped me resettle my digestion after eating a ton of fat. And I stopped really wanting to eat meat, because it felt so heavy, so instead I ate loads of unsweetened baking chocolate which I now know is a big stimulant. So after a while I was basically living on baking chocolate and full-fat sheep yogurt, because I never could tolerate cow milk. While living this way, I lost all my energy and willpower and would come home from work and immediately have to lie down. It was a struggle to get through the day, and I was depressed and stressed constantly. Social anxiety through the roof, and I couldn't figure out what was wrong with me. Anyways, when I read The Starch Solution in December, I immediately jumped on board the high carb vegan train, and felt a lot better. Then I discovered Freelee and Durianrider, and though I was initially skeptical, I got addicted to their videos and now love them and their message. It all makes so much sense. I can NOT believe how quickly my energy returned. I actually walk or run seventy blocks to work every day now, not because I am forcing myself, but because I have so much energy I HAVE to. The primary benefit so far health-wise has been both mood and energy, which is absolutely priceless. :) Though what's most important to me now is helping the animals and environment.. I have already gotten my parents to go vegan which is huge. I want to be able to connect with other people who live this lifestyle because it is such an important discovery for me and such a meaningful way to live.
