Thank you very much for your comment :)! I feel so clean and healthy finally eating the foods that are supposed to be in my body. It's hard when my parents are still meat eaters, and won't listen to a word I say about being vegan, but maybe someday they'll hop aboard the vegan train too!:) they always ask how I eat so much and stay so slim! Haha endless calories!:)

Eating low fat vegan is only difficult and expensive if you make it so.

When I first became vegetarian (and then vegan a few years' later) immediately I looked at all the plant foods that were available. Many people ask 'don't you miss meat, dairy, etc.?' and 'it must be hard eating this way'. My response is 'are you kidding?' There are so many delicious plant foods at our disposal from fruits, vegetables, whole grains, legumes, nuts and seeds. One only requires a little commitment and imagination.
