Much gratitude, Billa. My pleasure to present the recipe for one of my favorite salads - a la Pad Thai. Ingredients are either grown here at (la Joya Del Sol) or found locally.
The salad is made with a potpourri of vegetables, your choice of combination, as long as a good portion of the ingredients are made into noodles, and it looks beautiful in presentation. I always have different ingredients to insure its never made the same way twice. This recipe can be treated as a whole meal, and it's so much more vibrant than cooked versions, even non-raw people love it,
Salad: Spinach leaves, soaked dun dried tomatoes, red bell pepper, bok choy, spiral-sliced zucchini, cucumber and chayote, soft coconut meat noodles, chopped basil, pecans, cashews, edible flowers
PAD THAI SAUCE
Make the following infusion by blending in 1 cup coconut water and straining out the pulp:
1 stalk lemongrass
3 kaffir lime leaves
1 inch ginger root
Blend until creamy with the infused coconut water and toss with the salad, or serve separately:
2 cloves garlic
2 Tbsp sesame or olive oil
5 medjool dates
1 cup young coconut water
1/2 cup macadamia nuts soaked 8 hrs, drained
2 cups young coconut meat
1/2 cup cilantro leaves, packed
Juice of 1 lime
1 Tbsp lime zest
1 jalapeno or thai pepper to taste

well let me introduce the fact that I live in a community (la Joya Del Sol) with one of the worlds greatest raw chef's, Mr Eric Rivkin.. and I have asked him to post the recipe here.. this is usual for him..
As for me, mostly I eat whole fruits, some seed milks, loads of bananas, coconuts and simple salads.. but sometimes its just too much not to share in this amazing fare..
