Thanks everyone. These tortes are easier than they look, and they're 95% fruit and low fat.
One secret to success is thickening the filling with all whole food, not emulsifiers like Irish moss or psyllium husk, or fillers like carrot juice pulp. Thoughtful, creative use of whole foods that automatically thicken, then you refrigerate the torte, it gels and stands on its own, enough that even these banana slices hold the sids together after releasing the sidewall of a torte pan.
