So I'm wondering ...
What does a vegan look like? And a more important question, what is the appropriate emotional response to being told, "You don't look like a vegan"? I'm having a hard time naming it and can't help but feel like I've been called fat.

Who knows what they meant by it, but when in doubt go for the deflective funny.
Something like "Why, because I'm not wearing Birkenstocks and my hair's clean?" coupled with a sly grin
"And you don't look like someone who could contribute to the torture, rape and merciless killing of animals, yet you still drink and eat their bloody putrefying flesh......but its okay, on the outside you don't seem so savage."
That would shut up anyone I know, personally. ;)

Very appropriate I think, you shouldn't judge a book by it's cover just because others may. The person may be genuinely interested so don't assume.
Someone once said that to me, I asked why & she said because I didn't look malnourished or pale lol

It went really well from there! she started telling me about all the crazy fad diets she had tried, she was on the atkins that month. She was telling me about all the scary side effects of these diets & I found the perfect opportunity to let her know about all the benefits of a "plant based" diet, I didn't want to scare her off with "you should be a vegan rhah rhah rhah". She was very receptive to my info & hopefully I influenced her in even a slightly positive & more veganish way :)
