No those cooked items you mention are not "bad," but you'll find that fresh fruit is superior. Do your best to get your calories as close to at least 2500 on fresh, including a good size head of tender lettuce type greens. Then make up any caloric deficit with your whole foods cooked items in the last meal of the day.
Remember to hydrate with pure water so your weeing clear 10-12x daily.
That's great you've been packing in the fruit! Never make it a point to eat less fruit. The more sweet, juicy, ripe, raw, whole fruit, the better!
Initial weight gain is quite common, especially for those with a history of calorie-restriction or ED's and the details of who/what/when/why/how are covered pretty thoroughly in the second link (and its sub-pages) that Windlord gave you.
As for how to "fix" it -- you're already doing exactly that! The weight gain is a good sign that your body has begun its healing process. If indeed you're coming into this lifestyle from a past of calorie-restriction, your body needs time to heal metabolic damage and potentially other deficiencies or ailments.
It just takes patience, hydration, sleep, activity and carbs carbs carbs! :)
