Vitamin B-12 (cyanocobalamine)

  1. is a coenzyme and
  2.  is broken down to a smaller molecular form --(methylcobalamine) in your stomach,
  3. then that smaller molecular form goes to your liver to be stored and used later.

 

It can be hard to spot a Vegan Vitamin B12 deficiency. Why?

  1. Because enough B12 , can be stored in the liver to last 3-6 years.
  2. So, for instance, if you went vegan 5 years ago,
  3.  but haven't been paying any attention to your B12 intake to replenish those stores,
  4. you could be on your way to a harmful deficiency.
  5. And by the time you notice, it could be too late

 

 B12, is a water-soluable enzyme.

  1. Like Vitamin C,
  2. excess amounts of it is rapidly filtered out by the kidneys and
  3. excreted in the urine
  4. (which will be VERY yellow to orange looking while it’s doing so)

 

Vitamin B12 is not produced by plants or animals

  • It’s the only vitamin, thought to be produced in nature
  1. only by microorganisms– bacteria and
  2. nowhere else.

 

  •  It ends up in animal products
  1. because it’s absorbed in their digestive systems.

 

  • The vitamin B12 in supplements and fortified foods
  1.  is usually Cyanocobalamin and vegan,
  2. it’s a product of bacterial (Propionibacterium shermanii and Pseudomonas denitrificans) fermentation.
  3. they grow bacterial cultures to obtain vegan/vegetarian grade B12,
  4. which is easy to obtain from health food stores.

 

  • Some have suggested that you can get it from vegan food  
  1. because there are at time traces of it
  2. that are on the exterior of root grown vegetables.
  3. Problem is – wash the vegetables – you wash away the dirt with the vitamins.

 

  •  It's very important for you to grasp that in our modern food supply
  1. a.       B12 is found MOSTLY in animal products. Why?
  2. b.      Because Vitamin B12 --comes from our soil.
  3. c.       When a cow, for instance, --chomps on grass
  4. d.      she eats this vitamin B12-enriched soil.

 

  • And those ancestors of ours,
  1. who were able to thrive on a plant-based diet
  2. without adding any Vegan Vitamin B12 supplements?
  3. Well, they were getting their food --directly out of the ground still covered in soil
  4.  soil which they were never quite able to completely remove.

 

  •  Our food today, is usually very clean
  1. by the time it makes it to our stores, and
  2. then we further clean it in our own kitchen --(since most of us don't like the taste of dirt
  3. Goodbye Vitamin B12.

Actually I find that most of the organic lettuce/celery (and grapes sometimes) I buy still has visible soil on it. I purposely don't bother to wash it off unless it's excessive.
