Lemon juice, fresh parsley, celery, tomatoes, tomato sauce, corn, green peas, cilantro, green onions, oregano... the sky is the limit!
I personally love adding celery, parsley, lemon juice and tomatoes cut in squares. Sometimes I mash the potatoes first and then mix it all up.
A dollop of low fat hummus and loads of finely chopped parsley :D
Plenty of herbs and spices that are nice, as is fresh squeezed lemon/lime juice.
But if it's that creamy topping you need, some ripe avocado fits the bill.
I like to make my own tomato "ketchup" sauce with tomato paste, molasses, spices, and a little bit of water. Give it a try.

Such a nice flavour and even a bit salty from natural sodium they contain.
I love them with blended chickpea sauce too but I don't eat that every day only like twice a month.
Also nice is lowfat soyyogurt with some herbs as sauce or guacamole (but that's fatty tho) or tomatosauce
Try to wrap them in salad and have "poritos" - fantastic :-D
You can add some coconut oil to give it a buttery sort of taste. I like to put some salsa or tomato sauce on mine. Sometimes I will add beans or spinach or broccoli to make it a really filling dish. Adding in some spices and herbs are excellent additions as well. Baked potatoes are so tasty and there are so many ways to get creative with them. Have fun and happy eating!
Home made ketchup:
1/2 - 1 cup dried tomatoes
1 bunch parsley
1 garlic clove
1 - 3 dates
Some balsamic vinegar (not allowed) but on occasions, it is really tasty!
Dont add any water.
BLEND IT :) !
You can also make it without sun dried tomatoes, if you don't have, but I recommend you to buy immediately because you can use them instead of canned tomato sauce... it is much tastier, not canned, not processed, etc. Make sure to buy without added salt or sodium. You can also make them yourself with dehydrator, oven, or SUN!!!!
Hi Guys, I really don't want to spoil the lemon juice/tomato party, but what I know is that it is really bad food combining to mix acidic food with starches, it cannot digest well, please check it up.
My fave thing to do at the moment is to half them and spread a generous amount of decent tomato paste on them like toast, i bet blended sun dried tomatoes would be pretty good too.
beans, re fried beans, home made tomato sauce, and no potato is complete without some fresh chopped parsley
