30 Bananas a Day!

I have been doing a little research on what types of vegan foods to bring on outdoor trips. I will be leading a group almost everyday of the week, hiking multiple miles a day with the weekends to rest. This will be for 7 weeks. I am probably going to be the only vegan.. Though I am hopeful I will meet someone there who is also vegan.. 

Any suggestions?! The lighter the better because whatever I plan on eating I must carry.

i went on an overnight hike took dates rice beans and a can of corn. Then I had a bag of oats and made oatmeal for breakfast. I was content with this. I did bring some bananas too but ate them along the way. Its difficult because wet fruit is heavy so its easier to bring the stuff dry. But in my case the beans i took where out of a can to save on cook time and the rice I had cooked ahead of time again to save on cooking.

If you want convenience, you could also go for MaryJanes Farm Organic Vegan backpacking food packs. You pour boiling water into them and let them sit for about 10 minutes.

I think you can get them from REI, and order them bulk online somehow. They do not have a ton of calories though so you might have to have 2-4 packs for a full meal.

Also could take some other dried fruit, and oats.

yeah macdougal has some dry soups you can get just add water all vegan. My only gripe with those was the sodium was high.
