A group of top Kenyan distance runners follow a high carbohydrate low fat diet. Although it appears they eat few raw foods it's carbs that fuels their running.
For lunch they eat rice and beans along with some veggies such as potatoes. For dinner it's ugali (maize flour and water) with some veggies.
You can hear all about this on the BBCs Food Programme podcast "Can You Eat to Run"
The relevant information begins at around the 12 minute mark.
Scott Jurek also appears in the radio podcast.

I've always wondered what sustains long distance runners endurance. Sounds like no meat, no dairy, just lots of clean carb. Thanks for posting;)
