Okay...I've finally hit on it! Or, my tastebuds have changed...but I think that what I'm about to share is really really good.
For this tomato sauce you will need GOOD tomatoes. Preferably from your backyard or a local farm. Sometimes I use about 2-3 good handfuls of cherry tomatoes, sometimes 2 big vine tomatoes.
Tomatoes (see above for specifics)
1 handful of sundried tomatoes
About 1/2 - 1 cup of chopped celery
2 medjool dates (soak em if they're not fresh)
Juice from one orange
1 small handful of chopped scallions (green tops)
6-8 sprigs of fresh oregano
3-5 sprigs of fresh thyme
Add everything to a blender and Vitamix it up! I warm it on a stove little bit to marry the flavors (not sure if that's 80-10-10) but it's really just a warm...I'm not cooking it through.
If the stove top part isn't cool with you, don't do it. It's awesome as is...cold and mixed from the blender.
I've been eating this every night for about a week now.
