So, yesterday was my first day on 80/10/10. I tried to make a delicious salad, but my dressing turned out like crap. I just blended 2 oranges and a few pecans. A girl did it on youtube and it looked awesome and creamy. Mine looked like orange sludge (despite blending it at high speed for a long time) and it ruined my salad. Is it my blender? She used a Vitamix in the video. Is there a specific fruit or vegetable that would help make the dressing creamier?

I like to blend the fruit that I am using in my salad with celery, cilantro, and lime.
papaya+oj+celery, cilantro, and lime
pineapple+celery, cilantro, and lime.
mango+celery, cilantro, and lime+ one tomato
you really have to go with your intuition with the dressings and make some that are unique to your interests. i've made some good ones and some crap ones too. but this one tonight was awesome, even my non-vegan brother liked it:
1/2 red bell pepper
juice of 1/2 a myer lemon
juice of 1 orange
some coconut meat (i didn't measure but it was probably about 2 or 3 tablespoons)
blended up over lettuce. i added mango chunks and celery and that was epic but the dressing alone is legit.

bit of cilantro or basil depending on your likes
water to get consistency you are after

Having the vitamix or blendtec definitely make a HUGE difference when it comes to texture!
My favourite dressing that I have made so far was
1 cup orange juice (around 3-4 oranges)
1/4 cup raspberries
1 or 2 sprigs rosemary
and a spoonful or two of avocado if you like it creamy
1 red bell pepper
3 small tomatoes
small handful of argoula

I made one today that was pretty tasty - as I had a herby lemon flavor in my head so I did:
Juice from 1 lemon, pinch of fresh cilantro and basil, 1/2 date, and 1/2 stalk of celery. It came out herby and lemony...
Hope this helps and like the others said, you have to go with your intuition - if it pops in your head just try it and remember you can always add more to spice up the flavor......
Just use no dressing.
I eat the softer baby mixed greens that are easier to eat. I just chop up some tomatoes and use those with their juice as a dressing.
I can't eat a salads with dressing anymore.
