Lately I've been bringing rice mixed with peppers, carrot, corn, some green onions and herbs to eat as late lunch at school. I find it stores well and is easy to eat as well.
Have you got any ideas what else could I mix my rice with? I'm afraid that sauces would be too messy, don't you think?
zucchini, squash, bell peppers, peas, green beans, potatoes, etc. You could try making a curry and rice. Just keep any sauces in a separate container or just mix it in with the rice and keep it in a leak safe container (eventually getting a bento box). I make stir fry quite often and just use a little bit of sauce with the vegetables and put it directly on top of the rice and close the lid. Its never messy at work unless you use A LOT of sauce.
