30 Bananas a Day!

Hi everyone!
First I want to say that I love bananas. I eat a lot of organic, very ripe Cavendish.
I love the mini ones too.
I was introduces to the raw foot diet by Albert Mosseri, who is a great Natural hygienist in France. (the only real one in our country maybe, as far as I know.)
He has a position about bananas, wich is that only very, very ripe bananas are edible.
(It has to be almost yellow inside, not white)
Otherwise, he suggests to cook them, at very low temperature, in a small quantity of water.
Do you know why?
I personnaly never had digestion problems with bananas, but i eat them almost all the time in smoothies. (mono or not)
Sometime I find a little strange taste in the Cavendish ones, that makes me unable to eat a lot of them. I've foud that blend them is an acceptable solution.
So, any scientific reason? Or advice?

I love Albert Mosseri too-he's brilliant, although I don't agree with his stand on yoghourt and milk and eggs, which should not be part of the human diet. His reasoning is sound with bananas because unripe bananas are too starchy, their complex carbohydrates have not turned into simple carbs yet. In fact, a cooked unripe banana tastes almost exactly like a potato. Humans do not have many enzymes to break down complex carbs, so their digestion is very difficult. Cooking makes the complex carbs somewhat easier to digest but it also adds other problems.

Ripe bananas should be spotted and very sweet to the taste.

Today I ate about 15 bananas, they were all very ripe and delicious in the big mango/banana smoothie I made. (Yes It was a huge one!)
Anyway, I understand the point on cooking unripe bananas. I guess it's the same that people usally do with plantains...
I never had the occasion to eat a good, very ripe plantain, I never tried. I want to test it!

About Albert Mosseri, I believe that he's really a promoter of the low fat raw food diet, but he's ok with steamed vegetables, and he says that yogourt is acceptable on transition diet, but not milk. (Except raw milk for babies when mother milk is not available)
He does not include eggs on the diet, but he says that the yellow part is Ok on a transition diet as well, as it is not acid forming. (1 or 2 is a maximum/ day)
I totally agre with you: this foods should not be a part of the human diet.

Let's have a lot of organic, very ripe, RAW bananas!
