The only negative thing I've heard about corn pasta is that a lot of it is probably GMO, so that would be something to look for when you buy it. Have you considered sweet potatoes as another option? Also, if the rice and potatoes digest poorly for you, eat some salad beforehand! Have you been doing that? I don't have issues with digesting either of them, but whenever I eat salad with my dinner, it digests really well. Allllso, make sure you're drinking enough water!
I actually bough sweet potatoes yesterday and I will try them now. I do usually eat salad. Sometimes a massive salad few hours before the meal (as I cannot fit in that much food in one meal).

I will try cooking them on 120C! Boiling should do them. I think I baked them in the oven on 300C and they were kind of overbaked... I'm very bad cook!
you right, I read that cooking below 120c avoids the generation of acrylamide that is poisonous
I suggest homemade wheat bread and wheat based pasta. It's the best! And currently (officially) a non-GMO crop, unlike corn.
I though wheat is out of the picture on this life style? I have never had problem with gluten though. I can eat it.
Havent heard of Grain Damage. Is this a book/movie? I do know that gluten is not good in general. Some people are more sensitive than others.
im gluten free and usually have corn pasta. they also make good qinuoa pasta and also spinach pasta as another option! or you could always make spaghetti squash or zucchini noodles!

i find white rice is really easy for me to digest and i like rice noodles. potatoes are yum but i tend to not be able to eat a lot of calories compared to rice, and i had this one variety of potato make me feel sick (it was non organic) and i find steaming/boiling tats better to digest then baked. corn pasta slows me down a little but i like it for a treat. maybe try buckwheat pasta? wheat digests super slow for me so i avoid it but when i do have it i prefer to have a little with something that digests better.
i find eating salad helps digestion and always drink water before dinner
