IMO, 3-4 big russet. Or 5 - 6 smaller potatoes, whites or reds.
2-4 pounds do not be afraid of over doing it as the leftovers are excellent the next day
it is a lot of potatoes yet it not much in calories so we need to pack em in to make a meal
it not like sad food which are small in the tummy filled with dense worthless calories like oil one tablespoon of oil =1 and half large potatoes in terms of calories
we are big eaters round here

BB is right, they're perfect as leftovers.
steaming is the best method as it retains the most nutrients of all cooking methods. Easy with a little collapsable steamer. but if you don't have that option then just use maybe a half inch of water, get it bubbling hot fast, then turn way down for a slow cook.
