you have to wait for them to soften. the softer the sweeter!

if they are not ripe enough, you won't be able to eat them as the flesh will be kind or sticky and disgusting.

Thanks Nicolas, every day is a schoolday!

yeah, i'm still discovering new fruits once in a while. i would have miss so much delicious fruits not being a vegan.

persimmons are one of my favorite ones in the winter (even with all the amazing summer fruits, i was waiting for them to show up in the produce section).

my favorite ones of this season are cherimoyas. if you don't know them and have access to, go for them!

Cool, I'll keep an eye out, thanks...

Seems a lot of people here like them what I consider over-ripe, soft and gooey.  However if they are still hard then they are not ripe.  So, yeah, wait till they start to yield slightly to a soft touch, a bit like mangoes like you said.

Cheers Gianni, I had it in my head to treat them as a mango, I just hope they taste good!!

Mango, or maybe like a nectarine.

Yeah they should be very soft.  I was in Sicily recently and they had them at the local market around the corner from where I was staying and they were super soft to the point where they felt like they might burst if you pressed them too hard !  They tasted amazing and were so cheap as well (6 euros for a huge punnet).  I wish I could go back there just for the persimmons! They're just not the same in the UK :/

Like Gianni said, most of us like them squishy. Like little balls of jelly. But you can certainly eat them when they're on the firm side (unless they are Hachiya persimmons, then they MUST be squishy)

I concur with others that they should be kind of soft like a ripe tomato.

I am jealous though.  So many people here love them, my mom even has a P-tree.  But they give me a belly ache:-(

Peace, PK

So they basically have two kinds of permissions: hachiyas and fuyus.  The fuyus look like tomatoes...like an orange tomato  You can pretty much eat those anytime...they stay good for up to like a month.  They are better soft, and eventually turn into kind of a slimy pudding.  I prefer them a bit more stiff; the inside is almost like a cantaloupe texture, but tastes kind of like a mild cinnamon apple.  A lot of people prefer pudding mode tho.

The hachiyas look like roma tomatoes (a bit longer, sort of like a bell pepper) - you have to be more careful with them.  They can only be eaten when they've turned into jelly, otherwise they'll make your mouth go numb (go ahead, ask me how I know that...haha).  The texture is kind of hard to explain, but it's the same as the fuyus after they've fully ripened...like chewy jelly, I dunno.  I like fuyus the best, when they're solid (and a bit soft) - I chop off the top & bottom and then eat them whole, there's no real stiff center or seeds or anything, so you can plow through the skin, meat, and middle just fine.  Downside is that they sell for $2 USD EACH in my area, so they're a rare treat for me haha.

Thanks everyone! the variety I have is Rojo Brillante (spanish) and Swon they look like an orange large tomato I bought some more today so I hope I like them!! the first ones I bought are slowly getting softer maybe another day or 2.. peace to you all!!
