Hi this is Californiactually and I am excited to joint the forum as I finally fixed the problem of not being able to upload a user photo which was restricting me from the site.
I am a vegan, whole foods as much as possible. I eat very closely to The China Study diet. I also have started a website www.durianriders.com where I independently support durianrider with research that back his claims. I am so stoked that I have made it a year vegan and my cardiovascular disease markers/weight has pretty drastically improved. The vegan lifestyle did not cure my Ulcerative Colitis or my autoimmune arthritis and so I still exploring ways to resolve these issues. I would love to hear from anyone out there with UC and autoimmune arthritis or anybody else!

As for any suggestions for UC and/or arthritis....I assume you are following low fat so in addition you might try cutting out all gluten for your condition. You may be sensitive to grains as well so might try cutting those out. Sweet potatoes would be the easiest to handle high calorie cooked food. You might try just having that for your cooked meal for a week or so and then add one food at a time to see what you can handle.

I have tried 6 weeks strict gluten free, but grains and legumes together I have not yet done. I am considering trying 6 weeks of basically fruit veg and potato like you say.
Af course, vegan style won't treat your arthritis. You should treat it medically. Have you heard about stem cells medicine? My friend used the method to treat his arthritis, and it was totally successful. You have to go to a doctor first
Huh?? Why won't 'vegan style' fix arthritis?? My mum had nasty arthritis in her thumbs which is completely gone now after years on a vegan diet...
