Not sure, maybe with nice honey melons, but the water content could malke problems. Try it.
i have made ice cream by just freezing melon chunks... works great, i've made water melon, cantalope and honeydew ice cream before. :) and it is very good
I've blended melon (yellow or piel de sapo varieties) and put it into popsicle (ice lolly) trays. It tastes quite good, but it tastes like popsicles and not ice cream.
