i know no salt(low sodium) diets can aid in not retaining extra water weight, but is eliminating salt enough? or do you have to also limit sodium rich veggies to keep off the water retention?

You need sodium, you don't need salt. Just eliminate added salt but 500mg of sodium from sodium rich veggies is a good thing.
You can eat as much fresh tomatoes and celery as you want, you can't eat to much sodium (like 10 g a day) from them.
