30 Bananas a Day!

Ive been having it for dinner for a month now every night, im craving it and i 

know is super healthy, so i have no problem eating it plain cooked.. 

Is someone else as me obsessed with it?

Sweetpo, potatoes, all others do not compare to the sweet btsquash flavor! :)

Indeed it's a delicious and very versatile vegetable. It goes well with rice, as the basis for stew or soup, etc.

I have even made smoothies with the cooked flesh along with banana. I find that Kabocha squash (aka Jap or Kent pumpkin) is equally as tasty.

Whenever I see them on special I buy up big - as the above picture demonstrates.

Totally. If I went back to Argentina I'd live again on butternut squash during the winter. Although I have to say that baked acorn squash (zapallo japonés) is SO good too. 

Barbi what do you do with it and how much of it do you eat?  Do you eat fruit in the day?  What kind?

nothing much with the BNS... i do eat fruit, just not in amazing quantities as some people here do..

i love tomatoes, eggplant, apples, zucchini, cucumber, plums, peaches...

im more of a veggie type with broccoli, cabbage, onions, carrots, leeks, cauliflower, brussel sprouts, and greens! 

it is also fantastic in a raw soup with carrot, red peppers, peeled zuccini, sundried tomato, maybe a little garlic and herbs ;)

You can count me in.  When I was a kid my mother used to make squash and I hated it.  Never had butternut squash before though, but seeing your post this morning got me tempted later when I was at the supermarket. I saw what I thought was ½ a butternut squash (abóbora paulista) for 94 brazilian cents.  So I decided I would buy it.  Well, I baked it tonight and I loved it.  Thank you for the tip. :)

hahaha i totally used to hate it when i was a kid too! My mom also used to make bnq and i absolutly HATED IT!

Did our taste buds change, or did our mothers just not know how to cook it?



although i steam it, or bake it and rarely add anything to it, simple simple plain!

But i really go for the "mother not knowing how to cook" theory ;)

Best butternut squash recipe for me: baked, mashed, dash of coconut milk, a few drops of soy sauce and a ton of fresh coriander (cilantro).  Mazeballs!  Never gets old!

Mmmm butternut squash soup is soo good!
