Hi everyone,

I know that you can make rice out of celeriac, cauliflower or zucchini. What could you use to replace the seaweed? Cucumber skin maybe?

The cuke skin might be a bit tough but thinly mandolin slicing the whole thing (or a zuk) works great as a wrap.

I've got to agree.

I think the best option will be lettuce :)

Other veg/fruits sliced may not be bendy enough to use like nori.

Unless maybe you hollowed out a cucumber and filled it up, Would not be the same texture but could be yummy :)

I wouldn't use what she uses in that link, as she uses nori, which is a no-go (given that it has yucky salt). But now that I think about it, wouldn't cucumber and celeriac be bad food combining, as cucumber is a fruit and celeriac a starchy vegetable?

In that case lettuce is likely to be the best bet. :)

Hmm, I remember checking the back of some nori packages for the nutrition info, and they all said they had 0 sodium per serving.  I wonder about this.

Also, food combining rules are made with culinary definitions in mind, not botanic ones.  And although it's a fruit botanically, a cuke is considered a vegetable from a culinary perspective.  It's really in no man's land in terms of food combining. For some people it combines like a vegetable, for some people it combines like a melon.  I eat cukes with starchy stuff like carrots sometimes and have no problems.

Yes, I agree, I love eating cucumbers as a mono meal, but I find they combine well with fruit or starches as well. Cukes + dates = heaven! :)

and that it's not vegan 

I've done wraps with pak choi leaves which were pretty tasty! Had the salty - crunchy combo going on! I used pulsed celery for the 'rice', which worked well because it digests better than starchy veggies, and combines with fruit. So I did cuke and mango slices (some with baby spinach added as well,) with celery 'rice', pak choi wraps, and date sauce to dip them in. Nom! :D

i made these last week, the fillings were carrot, chives, avocado, tomato, snowpeas and sprouts.. i made a few with strawberries and avocado too :)

and i used cucumber with the centre part/seeds removed instead of seaweed
