I came back from having a body metabolic assessment just recently and I was told that my body was running just under 1250 calories a day.
I guess it explains why even though i exercise 3-4 times a week, I find it difficult to build tone and definition as the body is trying to preserve as much fat as possible because of the lack of calories I consume.
I was so shocked considering I thought I was eating so much. I find by the time my stomach stops bloating, it's supposed to be meal time. I would appreciate it if someone could give me some tips to up my calories.I want to know how to do this without having to sacrifice my desire to maintain a low fat vegan diet.

If you aren't already, you might want to look into using cronometer to track your calories on a daily basis. That will help you track your progress,
Smoothies are a great way to up calories, especially when using calorie-dense fruits such as bananas and dates. Once date season rolls around, look into Datorade (dates blended with water). get up at 6 am with the sun so you have more time to eat and burn calories during daytime to jump start your metabolism
eat dates banana / date smoothie is the classic way to up your calories
