Cool. What do you add the fennel, coriander and the mint to? Mint and melon?
Parsley goes in salads or banana smoothies.
Dill for salads or chopped up with cucumber.
Borage is a bit of an ugly plant, but it has blue flowers and the leaves taste kinda like cucumber.
Also for salad or banana smoothies, lovage, which looks like flat leaf parsley and tastes like celery.
Not what you typically think of as a herb, but violas are pretty and taste like bubblegum, leaves and flowers.
I usually just put fennel in salad, and I don't like coriander so I can't help you with that one. I've heard it's supposed to go with strawberries, though; the same weird way parsley goes iwth banana.
Mint and melon sounds good. It's nice with strawberries, too, and so is lemon balm - minty and lemony.
There are lots of different types of basil and mint as well.
