It's healthy but high in fat, so if you subscribe to the 80/10/10 ratio you'll need to limit it. It usually contains additives to prevent separation, such as guar gum, which aren't ideal. My impression is that the 'light' milk is essentially just diluted 'standard' milk, so you might save money just diluting it yourself to taste. You can make your own by blending warm water and coconut flesh/butter/flakes then straining. Plenty of pacific cultures eat diets very high in coconut products and stay slim and healthy.
Thanks for the feedback! I think I will stick to adding curry spices but remove the coconut milk from my recipes.
