30 Bananas a Day!

Hi Girls and Boys,

After all that speech about the benefits of consuming bok choy, I ended up buying a kilo this morning so I'm writing to ask if you have a favourite recipe using it!

I also have coriander, parsley, fresh oregano, majoram, zucchini, green onions, lettuce, spinach and I'm planning to buy some peppers and tomatoes before dinner... any suggestion?

Sounds like a savory veggie stew..
Mix tomatoes, peppers, coriander and spiralized/julienned zucchini, with a squirt of lemon juice, and use the bok choy as a wrap. :)

I like the idea of a wrap too. I would probably spiralized cucumber mixed with slices of sweet peppers, mint, corriander, papaya, sunflower sprouts and mango or spiralized cucumber mixed with slices of sweet peppers, mint, corriander, avocado, and sliced celery. I would try a dipping sauce made of orange juice, and lime juice....perhaps a few soaked sundried tomatoes blende in, though I have never tried this.

I do agree. I get creative on occasion for 'special' dinners with my mr., etc., but often I like my food plain n' simple...especially romaine hearts...mmmm. Baby bok choy is sooo tender and just plain delish!
yes and it's your job to get creative with the lfrv recipes ;)

people coming from SAD/cooked really do need recipes coz they're coming from the 'food as entertainment' paradigm and they've numbed their tastebuds thru salt and stimulant consumption.
i know i know, lol ;)

tru dat B! many of us like a little creative 'gourmet' lfrv once in a while....like parites *wink wink*. for me it's just so much fun to play with my food while respecting food combos. it's nice to show how exquisite whole lfrv foods can be (not they they aren't perfect in their natural state), not to mention uber delish!

I enjoy bok most when I remove the leaf part and matchstick the stem. Maybe this is one of the elusive "shoots" that are recommended as part of 811.

And yes, I still need something appealing, I find it quite difficult to stay raw sometimes, but I have to admit that the desire for cooked food is in inverse proportion to the quantity of fruit I eat. I was not eating enough fruit days ago, and at night I was tremendously attracted to cooked rice and stuff like that, because I did not eat enough during the day.
I just need time!

For the moment, I will enjoy my mixed salads, veggie stews, wraps and tops :D

There's nothing wrong with that. I was a gourmet chef before....with plans to open a cafe, teach workshops....and so on. Those plans are gone - R.I.P, hehe. My health is #1!

Sometimes when my creative bug attacks I want to play with my food or for extra special occassions or just because I can. The main difference now is that the recipes are easy, MUCH less time consuming, more fun and easy to digest. Simplicity is best, and less is more. You can still acheive this with a recipe.
