People have been asking me what I eat during the day now when I'm a raw-vegan. I decided to share with you (not really though) the dinner I made last night. :)
First I made a salad:
Chopped bell pepper - I love the orange one.
chopped sun dried tomatos - I would soak them for 30 minutes before putting them in the salad.
All put together in a big bowl.
Next I made the zucchini noodles. I forgot to take pictures while I was doing them. I only use a Julienne peeler. Pesto:
1/4 cup sunflower seeds - usually I would use pumpkin seeds but that was all I had.
1 1/2 handfull fresh basil
1-2 garlic gloves - depends how big they are.
1 tbs fresh lemon juice
1 tbs water
Combine all the ingredients in a food processer and pulse a few times until it's soft enough.
I love putting some nori on my noodles to get the salty taste.
As you can see it is sooo easy to make zucchini noodles. They were really really reeeaallly delicious.
