I am kinda obsessed with this salad right now. I dont know why but I cant get enough. It is even better if you make it in the morning and eat it later after it marinates in the fridge a bit.
1 head of kale chopped super small
3 grated carrots
1 cup dried currants
1/8 cups hazelnuts, chopped super small (optional)
2 lemons juiced
First massage the kale with the lemon juice, currants and hazelnuts. Then mix in the carrot and let it marinate at least an hour. Let me know how you like it!
