Today was nice! Both of my parents were out of town today, so it was just me and my son. (We are visiting from NC). We had a nice relaxing Saturday. Enjoyed a little bit of play outside and at the neighbor's house. Here is what i ate:
Breakfast: Located a mini blender! Banana/strawberry date shake (cup coffee w/soy creamer)
Lunch: 1/2 watermelon and baked sweet potatoes in fat free hummus
Dinner: Head of romaine w/ raw guac (SO GOOD - avocado, celery, yellow pepper, scallions, tomato, celery, mango)
Snack: Mango and banana smoothie
I located a mini smoothie blender in my parent's pantry, and made a few smoothies today. My Dad also has some really moist and delicious medjool dates on hand, so I used some of those too this morning!
I really enjoyed my watermelon for lunch. I had to wait later than I wanted to eat because we were next door. I was so hungry I ate some sweet potatoes, which my son was enjoying.
The guac was AMAZING for dinner. No spices needed. Very filling - although because I used an entire avocado this couldn't be a daily thing! I feel very satisfied this evening with my dinner. I could definitely eat an avocado every night, but I guess it probably wouldn't be the best thing to do...If my goals stay under 801010...is that okay though!?
I am really starting to enjoy the simple pleasures of fruit! I definitely didn't feel deprived today. And I am already thinking of all the wonderful things to make when I get home!
