Mango and tomato salsa!

When I was younger I hated tomatoes more than anything. If there was a tomato in my food I couldn't eat it. When I became a raw vegan I really wanted to change that, so I bought few cherry tomatoes and decided that I would eat one per day until they were finished. I was going to force myself to like them and it worked. I would not say that they're my favorite and that I would just have a tomato when I'm hungry but I like having them in my salad now :) 

The other day I found a recipe of a Mango and tomato salsa in a Icelandic cookbook. I changed the recipe a little bit so it would be 100% raw and it was really good. Maybe a little bit too much tomato taste for me but I still liked it. 


There are only five ingrediens in it:

2 cups mango
2 cups tomatoes
3/4 cup scallions
2 pitted dates
2 tsp. fresh lemon juice


Combine it in a food processor. and pulse it until it looks like you want it too. Some people want it very chunky. 

This recipe could not be more easy :D
You can eat it with whatever you want, but I like to slice down cucumber or zucchini and use the salsa for a dip. :)

I made something really similar to this a few days ago, but I didn't use dates, and I used jalapeno and cilantro and probably a bit more lemon juice. Sooo yummy :)
