30 Bananas a Day!

First salad since maybe 2 years, I lost count. But it was delicious! I hope to have this treat once a week now, while on other days still blending lettuce and greens into the banana smoothies :)

Not a very exciting recipe, but for people who are healing from IBD (and can have a little fat already):

corn-salad

tender spinach

soft lettuce  - (a handful of each of the greens)

2 mandarins, deskinned

pieces of peeled and deseeded cuke

just a few little pieces of avocado

-

the creamy sauce thanks to the Vitamix:

1/4 peeled tomato

some carrot

chunk of peeled cuke

1/6 or less avocado

Looks beautiful!  I'd be careful with the carrot... it can be one of the hardest if you've got IBD in my experience.
