30 Bananas a Day!

First salad since maybe 2 years, I lost count. But it was delicious! I hope to have this treat once a week now, while on other days still blending lettuce and greens into the banana smoothies :)

Not a very exciting recipe, but for people who are healing from IBD (and can have a little fat already):

corn-salad

tender spinach

soft lettuce  - (a handful of each of the greens)

2 mandarins, deskinned

pieces of peeled and deseeded cuke

just a few little pieces of avocado

-

the creamy sauce thanks to the Vitamix:

1/4 peeled tomato

some carrot

chunk of peeled cuke

1/6 or less avocado

Thank you so much Lissa! :) It took a long time, but it's nice to enjoy something more chewy in the diet now :)

Thanks Lois :)

Ha-ha WL, I seem to do that sometimes too....you only know until your family starts laughing at you.

Ok, maybe it's not such a change :)

Thanks, all :) And you're right Greenmama, it was a bit of a risk, but it gave no problem this time. :)

Kan me voorstellen dat je blij bent dat je eindelijk weer een salade kan eten!

En het ziet er heerlijk uit.

Looks beautiful!  I'd be careful with the carrot... it can be one of the hardest if you've got IBD in my experience.
