Today was glorious! I made Megan Elizabeth's: Orange-Ginger Pad Thai for a luncheon I served to some of my 92 day juice feast supporters/friends. The very first time I make something I always foul it up some how! However it was very good and we ate all of it without problems. In fact I was still hungry afterwards -- shock! I had brought other food for myself knowing that the entire dish was "my size". LOL
I got home early in the afternoon from work and made my Ambrosia smoothie/juice and sucked that down also. That was followed by 3 lettuce bowls: 3 red leaf butter lettuce leaves with fresh corn, tomatoes and sprouts. YUMMMMM!!! Tonight I'm having about 6 of these for dinner.
Today I'm preparing another luncheon for more supporters/friends. This group is the produce department at the co-op. I couldn't have had a better support group. When I was suffering they brought me back to sanity. When I was happy, they celebrated with me. I'm making Kristina Corillo's Meditarrean CousCous. Hopefully making a double recipe will give ME some also. LOL
I think I am truly back to normal. I have to up my calories quite a bit the next few weeks with ripe fruit of course. I am planning ahead and purchasing case-loads of fruit to rippen in my kitchen. I have lots of space thank goodness. Today I'm buying another case of bananas. The ones I bought on Wednesday will be ripe enough by Monday to eat. Meanwhile I'm forced to eat yellow bananas with minimal spots on them. Better than green. I've searched locally for ripe bananas and can't find them. I eat only organic and that is catching on as more than vogue here in Boise, Idaho. I do have the talent of effecting changes. I'll own this one! LOL
Today is my grocery shopping day. I'm getting 10 lbs of tomatoes, 7 lbs of greens, various other items including lots of citrus and other tasty fruit. I'm picking up a case of personal size watermelons-I'm eating one every morning; another case of bananas - stated above; a case of pineapple, and 2 cases of mangos. Buying 2 cases of Tommy Magos - my favorite - ensures that I'll have plenty of ripe ones each day. They rippen pretty fast in the window sill rack I made. If they get over-ripe they can be frozen. Same with pineapple and bananas.
