I had 3 days of celebratory luncheons for friends that supported me since taking on this journey to health through raw food. They deserved what I gave them. LOL LOL However, most of the recipes I fixed had overt fats in them. I of course ate along with my friends. Yesterday included. I cannot believe the epic luncheon I prepared for my friends on Sunday!!! Listed below. Problem is me and overt fats shouldn't be together. My weight actually dropped but my body fat% spiked almost 2% points in 3 days. I'm talking with my doctor today about this. He did ok 1 day a week for overt fats when I prepare meals for friends/guests, etc. Part of my business of mentoring raw students. I need to come up with a solid game plan on this issue. I'll be considering this at work today. I'll get back to you in tomorrow's blog with a solid guide line plan on overt fats.
Ok, the luncheon yesterday:
1) Kristina of RawfullyOrganic's: Epic Marinara Sauce. Not epic enough for me but passible and enjoyed by me and my friends. I'm searching for THE marinara sauce to have on raw lasagna. We had this over zucchini noodles with the skin on. With this on a bed of lettuce.
2)Megan Elizabeth's: Corn Chowder. I tweaked this a bit and added chives and some other herbs. This was way too sweet for my taste buds which definitely are different since my 92 day juice feast. But my friends simply loved it!!! I gave a sample of this to the co-op deli. I'm seeing if they would carry it for SAD'rs with the desire for a sweet cold soup that is healthy. This is in her recipe book and you can but the book on line for the recipe. My friends said they would buy it there in a heart-beat!
3)Kristina of RawfullyOrganic's: Fettucini Alfredo Sauce with Spiralized Zucchini Noodles!!! TOO DIE FOR!!!When I prepared this sauce at home, I tasted it and screamed aloud and scared my 2 cats!!! I simply think this is sent from heaven. It is that damn good!!!! For the "cheese" topping I pulverized 1/2 head of white cauliflower to sprinkle on top. This summer when it comes in season I am using orange cauliflower. What a wonderful topping that will make!
My kitchen and my car both smelled like Italian restaurants. LOL When I unveiled our 3 dishes my friends eyes grew large and they grinned. They are converting to raw food and Steve has to avoid Vitamin K currently. That is why the Fettucini and Corn Chowder. He couldn't have the Marinara Sauce because it uses greens in the recipe.
The moment I took the covers off the food the whole kitchen smelled like we were in an Italian restaurant and my friends exclaimed phrases of praise and gratitude! The moment we dug in all we could hear were each other expressing "HMMMM" "OHHHH" "OMG, THIS IS SOOO GOOD!" "WOW, THIS IS RAW???". These exclamations continued while we devoured most of our plates.
We all were stuffed by the end of the luncheon. Steve couldn't believe that he felt totally satisfied on raw food. I couldn't eat another bite! Kris left part of her meal on her plate for later consumption and threatened both of us not to take a bite! LOL
During the entire visit with discussed raw food of course. We had a blast!!
The Fettucini Alfredo was my favorite. Too bad it uses pine nuts in the sauce. But, once a week or once a month it will be on my menu for sure. I am fixing another batch next week for the co-op and some other friends who didn't get to make the luncheons because of other commitments. And, yes, I am going to make certain I make a double batch and have a good portion myself. LOL
My tracking was deplorable. I avoided starting up with Cron-o-meter because it used the metric system. However the other sites are not totally suited for the 80/10/10 charting. So, today I am trying out Cron-o-meter for a full day's tracking. My food scales do weigh by metric also.
I think yesterday was one of the funnest days I've had in ages. It wasn't a stellar start on my program but a good indication of how to modify and fit in with social engagements without feeling ostracized and standing out like a wierd duck on raw. I love sharing food and I thoroughly enjoy being with friends. The two can come together beautifully.

YES, most of them are low fat recipes. In fact I limit my overt fats and I can use hers. These are 80/10/10 recipes for sure.
I did a recap. I think it was right around this same time.

I have a ? regarding Megan Elizabeth's recipe book. Is it really Low fat recipes? I already have too many raw high fat cookbooks and I need one that is truly LFRV.

Comment by ORGANIC811LFRV on May 29, 2012 at 12:16pm Yes, Minium I do and it is quite a low tech raw food toy. Lots of possibilities for it. Make certain though that you use very firm vegies. Also, for the noodles get very large circumferance zucchini. I didn't at first and then I found good ones later last week. The larger ones are very good to use.

I think adding overt fats to your diet once a week sounds reasonnable. And this way, social gatherings wouldn't be too awkward. I think I'll follow you on this one!

I'm happy you've found a solution to your food tracking problem. As for me, obviously, I quite like Cron-O-meter precisely because it uses the metric system! It's not so easy to get a good idea otherwise.
I'm sure it's all a question of finding our pace and our way. As for me, I don't know if you've read my blogs but I'm having a blast! I need to get better organized, for sure, but I love this lifestyle...
I've been thinking that after my 30 days, I may have a day off and join you again.

Thanks for pointing that out. Yes, you are right that the stats have to do with %'s based on weight. Still, 29% is too darn high for this frame and my doc and I are monitoring this very closely. I do feel a little puffy from the last 3 days. I'll push the water through today. Thanks!
Comment by Greenmama on May 29, 2012 at 1:50am My guess is that your body fat percentage spiked because your weight dropped... likely from dehydration. It has more to do with math than with adding more fat cells. You're a pretty small lady, so small fluctuations can register in the numbers more easily. Let me give you an example. Let's say you were 115 pounds and 20% body fat--that's 23 pounds of fat on your body. Let's say your numbers went to 112 pounds and 22% body fat--that's 24.64 pounds of fat. And then you've gotta take into account the margin of error on your scale, which is significant.
So glad you had fun at your events and making yummy recipes.
