Maybe it's just me, but sometimes I really miss banana bread! I used to make a killer vegan banana bread back in my days of eating sugar and bread and junk. Buuut a couple of months ago when I tried my first Banana Bread Larabar, I was totally hooked; they taste juuust like banana bread but without all the refined sugar and oils. So recently I decided to make my own, and they turned out just as good if not better! So here's the recipe:
First, pulse the dates and bananas together in a food processor until well-blended.
Pour the banana-date mix into a large bowl. Then pulse together the almonds and walnuts until they are the consistency you want them.
Now pour the nut mixture into the bowl with the date-banana mix and combine the two together (I found using my hands was easier than using a spoon).
Now refrigerate until firm enough to cut individual bars. Once you've cut the bars, you can pop them into the dehydrator if they come out too moist still. I put mine in for an hour or so afterwards.
And here is the finished product! This recipe makes 6 bars.

Fat: 9.6 grams
Protein: 4.1 grams
I realize that fats and sweet fruit aren't a great food combo, but it doesn't seem to give me any issues, and I really enjoy this for a treat sometimes :)
