My concerns with the 80/10/10 diet

Our community would be delighted to know you better. Please tell us more about yourself and what brought you to 30BaD. I became 100% Vegan only in late July, but I've always felt like cooking vegs was a bad thing to do. I enjoy eating as much organic fruit as I can get, but I'm still keeping a detailed log on cronometer.com to ensure conformance to DRI (revised as Adam posted on this site); I also followed Adam's suggestion to go and read more from WHO nutrient intake guidelines, so I'm constantly at 98%-99% of nutritional targets daily.
But there's a grey area: I'm currently on a 7-1-2 rather than 8-1-1 diet, because I need to keep myself as well as my connections healthy, and my wife is omnivorous, so from time to time I have to eat some coked vegan dish just to "stay in touch" with her, am I making myself clear?
Given this, it's almost impossible to meet DRI and especially omega-6/omega-3 ratio below 10 with so little fat!
And so this will also be the area in which I'll need guidance by this site...

I'm currently 7-1-2 but almost 100% DRI compliant and stable weight (I've dropped those excess 5kg already).
So I'll need guidance on how to get 8-1-1, lowering fats but keeping DRI and weight...
