If you're staying on the Strip and won't have a car to drive, I would highly recommend bringing lots of your own produce with you, because the only things you'll be able to buy from the vendors will be overpriced apples and oranges. There is a Whole Foods up at Town Square and you can take the 24-hour double-decker bus called the Deuce to get up there but it can take a while depending on where you're coming from. If you have a car or can afford taxi fare, I was told that there are a number of Asian markets in the Spring Mountain/Chinatown area but I didn't go. There are mainstream grocery stores like Albertson's and Wal-Mart around as well but I don't know if any are within walking distance of the Strip.
I ended up bringing a suitcase full of bananas and dates which lasted me all four days of my visit. In the mornings after I went for a run, I came back to the hotel room and blended them up for a meal. Other than that I just carried around bananas and dates all day and drank water. Super easy. For greens I was able to get a huge bowl of sliced cucumbers and celery from one restaurant and brought bananas to eat with that. I had a meal of dates and plain steamed white rice one night at a noodle restaurant, didn't cause me any problems at all. Basically just keep calorically dense fruits on hand, be creative, and you'll get by just fine.
If you have a chance, definitely go visit the Pinball Hall Of Fame on East Tropicana. 10,000 square feet of vintage pinball, arcade machines and other novelties. It is completely free admission and most of the games cost a quarter. It's about 1.5 miles off of the Strip and you might be able to find a grocery store out that way on Tropicana as well.

When I’m not studying/doing design work (I am a senior engineering student, and I’m enrolled in some pretty demanding design courses for my final semester), I generally like to be outside in some capacity. Running is the only thing that I do religiously, as in at least 5 times a week, regardless of what else is going on in my life. But I am up for pretty much anything given the opportunity. And I like my lazy days too, staying home, reading, watching films, whatever appeals in the moment.
I agree that we definitely need to meet up sometime. Just let me know if you have any ideas as to where/when : )
