Setting specific goals has been difficult and at times I’ve wondered why. What I now realize is that this year has been one of release and what I was trying to do was focus on adding things in rather than making way for new things to come in. I have two compost systems. One is just a standard black bin, similar in size to these ones:

But this is not big enough for our family, so I also have an open compost heap, which works in Australia, because we get lots of heat and moisture, so everything breaks down pretty quickly.
In England, I do not think this would work so well.
The best compost system I saw in England was at the Friends' Meeting House in Leicester. I lived in a two up and two down with a garden the size if a tablecloth, so I used to take my scraps to the Friends' Meeting House. They allowed people to deposit stuff in their bins.
The system was home made and worked like this.
It was a three bin system, and the bins were three adjoining wooden square boxes, rather like crates without lids.
The first box had the items to be composted put into it and was uncovered.
The second bin was full of composting items and was fully covered with carpet.
The third bin was open, full of compost ready to be used.
When the first bin became full, it was then covered and became the second bin.
The second bin then was uncovered and became the third bin, full of ready-to-use compost.
The third bin by this time was hopefully empty of compost (which had been used on the garden) it was then ready to become the first bin.

If you have the space for this kind of system, and the ability to construct it, then I would recommend it.

Otherwise you could try a larger size of ready-made compost bin.
If you put in a lot of fruit scraps, green garden clippings help to 'balance' the fruit scraps. Also paper and cardboard can be composted.

I actually do have questions, i found the foodnsport website not to be as detailed as i would've liked. I am curious what an average day is like, and also what is available to do with free time (if there is any)? I know the fasters have to rest, but do the stuff participate in any fitness activities together? How about the location of the retreat, is it near any cities, or secluded? What kind of facilities does the centre offer, (ie. pool)? How many interns are involved in the program? What kind of things do you learn?
