OK, what is going to be crucial for you, in order to settle at the correct weight for you, is getting data! It is far too easy to under eat, feel all sorts of cravings and have the percentage of calories from fat too high and not loose weight WHILE EATING HEALTHY! WTF indeed! :) I've been there and I know it's damn frustrating! But although some of what is recommended here may seem counter-intuitive to you at first, give it a chance it really does work.
First thing, go to: http://cronometer.com/ and sign up so you can start logging all your food that you eat, cheat or not! If there's something that you can not find in the database, it easy enough to Google that food find the information and create a custom food entry in Cronometer.
With that done, be sure to view the 30Bad guidelines at:

to get the "lay of the land" here and also to see what is recommended, like shooting for 2500+ calories a day for females. Don't get too overwrought, it may be tough to get in that many calories at first, but work on it and keep logging! If you have low energy, bad mood or crazy string cravings, eat more calories! Also, drink LOTS of water so you have to pee an annoying amount. And work on getting to bed early and getting a lot of good solid sleep (that's one of the things I have a hard time with), it really does make a big difference, esp in weight loss.
