I come from a long period of calorie restricting and in the past few months I have been trying to put on some healthy weight. I'm a 5' 5" male and only weigh about 108 pounds. I don't feel too skinny, I feel healthy and happy with my body but the general consensus seems to be that I need to gain weight. Anyway, I am slowly upping my calories. I wonder if you approached your parents about your intentions with this lifestyle they would understand abit more. If you explained to them that in order to consume enough calories you would need more fruit available to you (since you gaining weight is important to them), they may comply. If it's not an option for you than keep your focus on high carb LOW FAT VEGAN choices and eat as much raw as possible. Getting enough calories and being VEGAN are the most important aspects. If you need to include cooked potatoes, rice, quinoa, millet, steamed or roasted veggies, corn, etc to have the volume of calories with less overall volume of food it would be your best second option.
