yiros: roasted capsicum (can do raw), thyme. Tabbouleh: celery bourghal (inspired by someone else's idea), mint, parsley, tomato, lemon zest and juice. Tziki: pureed zucchini, cucumber chunks, lemon zest and juice. wraps: lettuce =D

yep it's roasted capsicum =) but you can just use raw or dehydrated (if you can be bothered) if you want. For another flavour, roasted mushrooms (or fresh) marinated in lemon, oregano and thyme would also work well... kinda like the 'chicken' yiros I suppose.... but not chicken! ;)
