yiros: roasted capsicum (can do raw), thyme. Tabbouleh: celery bourghal (inspired by someone else's idea), mint, parsley, tomato, lemon zest and juice. Tziki: pureed zucchini, cucumber chunks, lemon zest and juice. wraps: lettuce =D

For another flavour, roasted mushrooms (or fresh) marinated in lemon, oregano and thyme would also work well... kinda like the 'chicken' yiros I suppose.... but not chicken! ;)
