I used 5 cobs of sweet corn (about 440 calories) Preferably organic since we don't know if the conventional is a GMO or not
chopped up a little cilantro (to your liking)
1/4 of an onion diced (you could probably use green onion and it would even be better)
1 tomato diced
1 small avocado diced
4 small stalks celery diced (for salt flavor)
small amount of red bell pepper (for looks more than anything)
1/4 lime squeezed or to your liking
total approx 650 cal's
if you want it sweeter squeeze the juice from some pineapple over it. However I enjoyed the break from sweetness and ate it all.
I am not sure I will anymore eat this much corn at a setting... I think I will just occasionally use it as a salad topping from now forward.
This looks tasty.. can you provide a recipe for us? :)
