how did you do these torteletts? i believe it is date on the bottom and banana ice cream on top but how do you keep it that firm?

oO( i was taking this to a party, the lemons and limes were for drink garnish. there are blood oranges and strawberries, black grapes. missing in the photo were figs and dates ( there were added after the pic was taken) the little deserts are made from dates and peanuts, coconut, lemon and coconut palm sugar )Oo
